Telshi Riesling 2023

Production process: The Riesling grapes were harvested manually at first light in September. The grapes were carefully sorted by hand and then separated and pressed after a light soaking on the skins. following cold settling, the juice was transferred into 2 stainless steel tanks for a cold and long fermentation. After fermentation, the wine stayed on its lees for part of the time until bottling.
Tasting notes: The wine is characterized by the aroma of white flowers, chamomile and citrus. It is dry, slightly acidic and refreshing.
Winemaker's notes: Telshi Riesling is the first step on the way to a new Riesling vineyard that was planted in the Valley of Tears (altitude 1120 meters above sea level) in the high north of the Golan Heights. Wine production requires a lot of patience and it will take several years before the vineyard yields improve. The Talshi series is dedicated to wines on which we have chosen to experiment with different styles. Riesling is the variety that excites me the most to work with. The illustration on the label represents that initial, almost childlike enthusiasm that connected me to the winemaking, to the joy of discovery and adventure.
