Syrah 915 2021

Production process: After a particularly cold and rainy winter, a lot of work went into managing the growing season with strict monitoring over the ripening. The grapes were harvested at first light from the western section of our Syrah vines. Thanks to the close proximity between the vineyard and the winery, the grapes were quickly delivered.
After careful cluster sorting, destemming and a light crush, the grapes were transferred to 2 wide stainless steel tanks for a controlled fermentation of about 14 days together with a gentle extraction process.
At the end of fermentation, the wine was ransferred into 400 liter French oak barrels, 20% of them are new, for continued malolactic fermentation and aging on the lees. The wine aged in barrels for 16 months.
Tasting notes: Syrah 2021 is different from its predecessor. This was first growing season
the wine was totally in our full care, contributing to the formation of the unique "Tel Shifon" character.
The wine has a broad aromatic spectrum that ranges between the distinct fruitiness of the Syrah,
with peppery, spicy and complex aromas, the result of malolactic fermentation in barrels and aging on the lees for an extended period. The body is light and soft but maintains firmness and presence with a natural acidity that is present in the background thanks to an early harvest that contributed to creating a balance between the various components of the wine.
