Production process: The grapes were harvested manually at first light near the end of August, were cooled for 24 hours and pressed the next day after careful sorting. The juice was transferred into just 4 oak barrels, each with a volume of 500 liters, that were produced for us by a small family cooperage in Burgundy, France, with a gentle and dedicated roasting for Chardonnay wines. After the end of fermentation, the wine was aged on its lees for 9 months.
Tasting Notes: This is the first varietal Chardonnay wine from Tel Shifon. The wine is characterized by a distinct and varied fruitiness of fresh summer fruits, herbs and spices. It is a medium to soft bodied wine that leads to a long and complex finish.
